From The Ocean to Your Plate
Early morning, as the sun is just coming up over the bay, the fisherman wonders how many crabs he will find in the traps he put out the night before. As he heads out in his boat, the same boat his Father had used and same one he planned to give to his son one day, he hopes for the best. The first few traps are nearly empty, the heat had driven the crabs towards deeper, cooler waters, just as he feared. He heads out a little farther. The traps start feeling a little heavier as he pulls them from the sea. Soon the fisherman is headed back to shore with a smile on his face and a boat full of crab, ready to be cooked. The steamer is ready and the crabs are loaded in the basket and steamed live, whole, capturing all of the flavor and protecting the delicate crab meat. The crabs are cooled and it is time to pick the crabmeat. Much like catching the crab, this skill is passed from generation to generation and requires a delicate touch to keep the whole beautiful pieces of crab.
